I have been trying a bunch of pumpkin recipes lately. I also was looking for steel cut oats recipes because I heard it is more nutritious than regular oats. I was so happy when I found this recipe. It is very thick, but if you put a little milk in your serving bowl it’s the perfect consistency.
Pumpkin Steel Cut Oats:
3 cups water
3/4 cup steel-cut oats
1/2 cup quinoa, rinsed
1/4tsp salt
3/4 cup canned pumpkin
1tsp. pumpkin pie spice
3 Tbsp. agave nectar or maple syrup
1/2 cup dries cranberries (optional)
1/3 cup coarsely chopped walnuts, toasted (optional)
Milk, optional
1. In a large saucepan, combine the water, oats ,quinoa and salt. Bring to a boil. Reduce heat: cover and simmer for 20 minutes.
2. Stir in the pumpkin, pie spice and agave nectar. Remove from heat: cover and let stand for 5 minutes or until water is absorbed and grains are tender. Stir in cranberries and walnuts if using. Serve with milk if desired. Yield: 4 servings

And I’m not a big pumpkin fan at all but I’d like to try it with other things. Since I do like oatmeal a lot, this would be a great one!
