This recipe has canned pumpkin instead of oil. They were more like granola bites than cookies. They were very dense. I wasn’t sure if my kids would like them, but they couldn’t get enough of them!
All the wet ingredients beat together. |
The oatmeal is added. |
Mix everything together and add cranberries and chocolate chips. |
Drop rounded spoonfuls onto ungreased cookie sheet. |
They turned out very yummy! You could always add other ingredients like almonds, raisins, or coconut.
Cranberry Chocolate Chip Oatmeal Cookies:
1 cup canned pumpkin
1/2 cup brown sugar
1/4 cup Domino Light ( a stevia and sugar blend)
2 eggs
1 tsp vanilla
1.5 cups whole wheat or whole white flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 cups oatmeal
1 cup dried cranberries
1 regular size bag chocolate chips ( You could also use mini chips. I think it would be better.)
Directions:
Heat oven to 350 degrees
Beat together pumpkin and sugars
Add eggs and vanilla, beat well
Add flour, baking soda, cinnamon, salt,, mix
Stir in oats, cranberries, and chocolate chips
Drop rounded spoonfuls onto ungreased cookie sheet
Bake 10 to 12 minutes
