I discovered this recipe in a magazine. It was an advertisement for Country Crock. It’s the easiest recipe I’ve come across for macaroni and cheese, and my kids love it, which makes it a winner! I have changed the recipe slightly.
Easy Mac and Cheese:
Ingredients:
4Tbsp. margarine or butter, melted, divided
1 cup 2% milk ( I used 1 %)
8 oz cooked macaroni (I used whole wheat)
2 1/4 cups shredded cheddar cheese
1/4 cup dry bread crumbs
1 Tbsp. grated Parmesan cheese
Directions:
Preheat oven to 400 degrees. Combine 3 Tbsp. margarine or butter with the milk, pasta, and cheddar cheese in an 8 inch baking dish.
Combine bread crumbs, Parmesan , and remaining margarine in a small bow; sprinkle on top. Bake 30 minutes or until heated through. Makes 6 servings.
