I love simple and healthy meals. Especially ones that use leftovers. I try to incorporate different sauteed vegetables into many of my meals. I came up with leftover steak vegetable stir fry. It was a nice compromise for me and my husband. He’s a big meat eater and I’m trying to get him to eat more vegetables.

Leftover Steak Vegetable Stir Fry
Ingredients:
One leftover steak of any kind (If you don’t have a leftover piece you can saute a raw piece. Just make sure you start sauteing the meat first before you add the vegetables.
2 small zucchini
2 red, yellow, or orange peppers
2 handfuls of spinach
1 1/2 cups mushrooms
1 tablespoon avocado oil or canola oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder
Wash zucchini, peppers, spinach, and mushrooms well. Shred and wash spinach well. Chop up the zucchini in thin slices. Chop peppers in thin to medium slices as well. Slice mushrooms into quarters. Slice leftover steak into medium pieces. Add the avocado oil (or whichever oil you’re using) to a warm, large frying pan. Heat for about 30 seconds.
Turn up heat to medium high and add vegetables and salt, pepper, and garlic powder. Stir occasionally. Cook for about five minutes and then add steak. I also use vegetables in my crustless quiche.
Continue cooking until steak is warmed through and vegetables are semi tender.
Serve immediately.
