I wanted to make something special for my kids for Valentine’s day. I searched Pinterest and found a few recipes for different kinds of brownies. I decided to revise and combine a few to make them a bit healthier if that is possible! I came up with a lighter version of cheesecake brownies. This recipe combines two of my favorite foods… cheesecake and brownies! So here goes. I hope you find them as delicious as I did.
Ingredients:
Brownies:
1 box of brownie mix (I used Duncan Hines, you could also make your own
applesauce instead of oil. I used 3/4 cup because that is what the box required.
Cheesecake:
2 8 oz packages cream cheese
1/2 cup Domino Light (Stevia and sugar blend)
1 1/2 tablespoons vanilla
2 large eggs
Directions:
Preheat oven to 350 degrees
Make brownies according to package substituting applesauce for oil. Pour into a greased 9 x 13 baking pan. In the bowl of an electric mixer beat cream cheese and sugar until smooth. Add eggs, one at a time, beating well after each egg. Add vanilla and beat until combined. Pour over brownie batter.
Bake 45- 50 minutes until center is set. Cool completely on wire rack and then refrigerate overnight and until ready to serve.
Makes 18-20 brownies.
