One of the things I love about fall is all the pumpkin recipes that people share. I think we should make them all year long though! I got this recipe from the Dr. Oz Show and my whole family loved it. It’s a little healthier than most recipes, so I wasn’t sure what the verdict would be. I was pleasantly surprised!
I love any baked goods that contain pumpkin except for pumpkin pie for some reason. These are a healthy version of pumpkin muffins. Here they are!
Pumpkin Muffins
1 1/2 cups whole wheat flour ( you could also use white whole wheat flour)
1 tsp baking soda
1 tsp salt
1/2 tsp ground cinnamon
1/4 tsp grated nutmeg ( I just used ground nutmeg)
1 cup natural sweetener ( I used agave nectar)
1/2 cup canola oil
2 large eggs
1/2 (15 oz) can pumpkin puree (about 7/8 cup)
1/2 cup unsweetened applesauce
Directions:
Preheat oven to 375 degrees F. Whisk together the flour, baking soda, salt, cinnamon, nutmeg, and set aside. Whisk the sweetener, oil, eggs, pumpkin puree, and applesauce. Add the dry ingredients and fold with a spatula until the flour had been absorbed. Place in muffin tins and bake 20 to 30 minutes. Cool for 10 minutes. ENJOY!
